- 250g Pasta (Fettuccine or Penne)
- 200g Feta Cheese
- 200g Cherry Tomatoes, halved
- 2 tablespoons Olive Oil
- 2 tablespoons Balsamic Vinegar
- Salt to taste
- Pepper to taste
- Fresh or dried Basil
Instructions
- Cook pasta in salted water according to package instructions until al dente.
- While pasta cooks, prepare the cherry tomatoes and feta by halving the tomatoes and cutting the feta into small cubes.
- In a large bowl, gently mix the pasta, tomatoes, and feta together to avoid crushing the ingredients.
- In a small bowl, combine olive oil, balsamic vinegar, salt, and pepper; whisk well.
- Drizzle the dressing over the salad and mix well to ensure the pasta and vegetables are nicely coated.
- Garnish with fresh basil and serve chilled.
