Description

A refreshing Mediterranean pasta salad with ripe cherry tomatoes and creamy feta cheese, enhanced with fresh basil and a tangy dressing.


Ingredients

Scale
  • 250g Pasta (Fettuccine or Penne)
  • 200g Feta Cheese
  • 200g Cherry Tomatoes, halved
  • 2 tablespoons Olive Oil
  • 2 tablespoons Balsamic Vinegar
  • Salt to taste
  • Pepper to taste
  • Fresh or dried Basil

Instructions

  1. Cook pasta in salted water according to package instructions until al dente.
  2. While pasta cooks, prepare the cherry tomatoes and feta by halving the tomatoes and cutting the feta into small cubes.
  3. In a large bowl, gently mix the pasta, tomatoes, and feta together to avoid crushing the ingredients.
  4. In a small bowl, combine olive oil, balsamic vinegar, salt, and pepper; whisk well.
  5. Drizzle the dressing over the salad and mix well to ensure the pasta and vegetables are nicely coated.
  6. Garnish with fresh basil and serve chilled.

Notes
