- 400g Halloumi, cut into 2cm cubes
- 1 red bell pepper, cut into 2cm pieces
- 1 yellow bell pepper, cut into 2cm pieces
- 1 red onion, cut into 2cm pieces
- 2 tbsp olive oil
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or ghee
- 1 large onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 piece ginger (about 2cm), grated
- 1 red chili, finely chopped (optional)
- 1 can (400g) chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric
- 1/4 tsp sweet paprika
- 1 pinch of sugar
- 200ml coconut milk (or cream)
- 100ml vegetable broth (or water)
- Juice of 1/2 lemon
- Fresh coriander, chopped, for garnish
- Salt and pepper to taste
- Basmati rice or naan bread for serving
Instructions
- Prepare the Halloumi and vegetables: Cut the Halloumi, bell peppers, and onion into 2cm pieces and set aside.
- Mix the marinade: In a bowl, combine olive oil, garam masala, turmeric, chili powder (optional), salt, and pepper.
- Marinate the Halloumi and vegetables: Add the Halloumi and vegetables to the marinade and coat well. Let it sit for at least 15 minutes to absorb the flavors.
- Assemble the skewers: Thread the Halloumi and vegetables alternately onto the skewers for an appealing presentation and even cooking.
- Heat a large pot with olive oil or ghee: Sauté the finely chopped onion until golden brown.
- Add garlic and ginger: Briefly sauté with the onions. Add the chili if desired for extra heat.
- Stir in chopped tomatoes and tomato paste, and bring the mixture to a boil.
- Add spices: Stir in garam masala, coriander powder, cumin powder, turmeric, paprika, and sugar. Let the sauce simmer for 10 minutes to develop flavors.
- Stir in coconut milk (or cream) and vegetable broth (or water): Let the mixture simmer for another 5-10 minutes until thickened. Season with salt and pepper.
- Squeeze lemon juice: Stir in the juice of 1/2 lemon to enhance freshness.
- Grill the skewers: Grill the Halloumi skewers in a grill pan or on the grill until golden brown (about 2-3 minutes per side).
- Combine the skewers with the sauce: Place the grilled Halloumi skewers into the Tikka Masala sauce and stir gently.
- Serve: Serve the dish with basmati rice or naan bread and garnish with fresh coriander.
Notes
You can prepare the marinade in advance for added convenience. If grilling is not an option, the skewers can be baked at 200°C or pan-fried.
